Spicy Blackened Snapper and Roasted Veggies for Dinner July 15, 2010



Tonight's dinner was Spicy Blackened Jerk Season Snapper Fish and roasted veggies. This is how I made it; I put lite soy sauce on both sides of the fish, I covered the fish with dry rub Jamaican Style Spicy Jerk Season and Lemon Pepper Seasoning, I used a stainless steel pan and used about 1 tbls. Sunflower Oil, 1 tbls. Olive Oil and a pat of butter on pretty high heat I put the fish in pan and saute for 2 minutes on both sides of the fish and then placed in a 375 degree oven for about 4 to 5 minutes minutes. I picked some yellow squash, and thyme from the garden and used them along red pepper, zucchini, carrots, whole cloves of garlic, sea salt and cracked pepper, Cumin Spice and tossed in Extra Virgin Olive Oil and roasted the veggies in the oven at 375 degree's for about 15-20 minutes or until tender. I topped the fish with a garlic butter cheese pat!
