Dinner Tonight Salad and Pesto Pasta July 16, 2010

Tonight's dinner Salad how I made it; I used romaine lettuce, cucumber from my garden, carrots, green pepper, Parmesan Cheese, Roasted Chicken, Extra Virgin Olive Oil and White Wine Vinegar. Pesto Pasta how I made it; I boiled Linguine in salted and oil water for about 7-8 minutes. I made pesto I did not measure any of the ingredients as I made it, just so you know. I used Basil from my garden, Extra Virgin Olive Oil, lemon juice from 1 lemon, mixed nuts and Parmesan Cheese. I used my food processor and chopped the nuts, I added the Basil, Olive Oil, lemon juice, salt and pepper and cheese, I pureed it into a thick paste. I thinned it out with a little more oil. I took 2 tbls. of the Pesto and mixed it in with the cooked Linguine Noodles. I sprinkled the cheese on top.
