Saturday Morning Breakfast June 3, 2010
Saturday morning breakfast; Greek Yogurt for 1 cup it has 23g of protein, o fat, 120 calories, 95mg sodium with very ripe strawberries, fresh blueberries and my homemade granola! I also, made scallion cream cheese and I had an ultra thin bagel, at 120 calories less calories than a regular bagels which has 220 calories. How I made the scallion cream cheese: I took 5 scallions and cut them very thin mixed them in with a 8oz brick of cream cheese, I added a pinch of Sea Salt. How I made the granola; Mix in a bowl 4 cups of Old-Fashioned Oats -not instant), 2 cups of sweetened, shredded coconut 2 cups of siced or slivered almonds, 1 1/2 cups chopped walnuts, 1/2 cup of brown sugar. In a small sauce pan bring the 1/3 cup butter, 1/3 cup honey, and 1 tablespoon of vanilla to a soft boil. Mix the wet ingredients with the dry, I get my hands in and mix everything together. I lay the granola flat on a cookie sheet, I bake it for 15- 20 minutes. Keep a watchful eye on it because it has a tendency to cook very fast. Turn the granola over halfway through the cooking process. Cook until golden brown. Let air dry for 1 hour, break up into little pieces. You can add dry fruit at this point, I have added in the past dried cherries, raisins, dried pineapples. Store in a tight container for further use.
