Easy Dinner Tonight Wednesday June 30, 2010
After the day I had, I wanted something easy for dinner tonight, so I came up with sandwiches, this is how I made it; 2 slices of Sour Dough Bread, I put Extra Virgin Olive Oil and Red Wine Vinegar on the bread, I then sprinkled it with Italian Seasoning, I placed Gouda Cheese on each side of the bread, then I scrunched up sliced chicken and ham lunch meat on top. I saute` a few slices of green pepper, a few slices of jalapenos and a few slices of poblano peppers for a few minutes in olive oil, and right before I took it off the stove I added 1/2 of chopped garlic, I cooked it less than 1 minute, this gives the sandwich that little extra touch of love. I then added this pepper mixture to the sandwich. I then wrapped the sandwich in tinfoil and baked on the lower rack for 10 minutes at 400 degrees, unwrapped the tinfoil and baked for another 5 minutes on the top rack of the oven. Yummy!
My Visit To The Hospital This Morning June 30, 2010
Jeff was complaining that his stomach hurt last night. While I was making my Chocolate French Toast this morning, he said he better go to the hospital. I said "okay, but I need to take a picture first of my French Toast." I know that's sounds crazy, but his pain was not severe on a scale of 1 to 10 it was a five. Anyway, I took my picture, scarfed the french toast down and wrote my recipe down and out the door we went. Oh, I grabbed my bag and filled it with some of my books and a journal, I have to have something to do while I am in there. We found out he has Diverticulitis and 3 kidney stones. He had been eating a lot of sunflower seeds this past week which helped bring it on. I also, had a lunch date with my friends today and I was able to make it only being 20 minutes late. Jeff and I went together to the lunch date. After getting home so late from running around getting him his medicines, I was not prepared to go to my girls night of card making and Laura's Birthday celebration. Plus, I think Jeff really wanted me to stay with him even tho he would not say so and I will always put his needs first, after I take the picture of the food, ha ha. You know ladies, that's one of the secrets to a great marriage, putting your husband first. I have had a couple of bad night sleep this week, so I think tonight I will go to bed early.
Chocolate Filled French Toast for Breakfast Wednesday June 30, 2010
Breakfast Chocolate Filled Croissant, very tasty. How I made it; I took a croissant sliced it open then put Nutella all inside. I then made a batter of 3 eggs, 1 tablespoon of cinnamon, a pinch of fresh nutmeg and about 2 tablespoons of sugar . I mixed all that up then I added about 1 cup of Cream Brullee`, and about 1/2 cup milk mixed that up and then dunked the croissant in the batter and placed in a frying pan with a pat of butter. I cooked it for about 3 to 4 minutes. I added a pat of butter, sprinkled with cinnamon and powdered sugar and topped it with syrup! This would make about 3 French toast. Yummy!
Watch it very carefully once you turn it in the pan it has a tendency to cook very fast, don't walk away, stay with it!

Tuesday Dinner Chicken Pad Thai
Dinner tonight; Chicken Pad Thai, oh so good! How I made it; I filed a pan with water brought it to a boil added rice noodles turned off the heat and let the noodles sit in water for 10 minutes, then I drained, set aside. I sliced chicken breast on the diagonal very thin pieces, sauteed in 2 tablespoons Extra Virgin Olive Oil and a tablespoon of butter I cooked them for about 7 to 10 minutes, take them out of the pan set aside. I then sliced 1 red onion and 1/2 poblano pepper very thin and sauteed for about 5 minutes on medium heat in 1 1/2 tablespoon Extra Virgin Olive Oil, I then added 2 heaping handfuls of Bean Sprouts cooked another 2 minutes. I then moved the vegetables to the edge of pan I then added 1/2 tsp butter to the middle of pan and added 2 beaten eggs. I cooked them for 1 to two minutes, then I mixed them all in with the vegetables and added the cooked chicken and cook drained noodles and the Pad Thai Sauce and another handful of bean sprouts, cooked for 3 minutes. I topped it with chopped scallions and crushed peanuts and a squeeze of lime.

Today's breakfast; Cheese Omelet with salsa and a glass of Florida O.J., yummy! I like my omelets very paper thin, no fluff for me! I have lots to do today; hang out the laundry, go to the market, as Jason would say, I just love saying that, clean the house and decide what to make for dinner. Oh yes, I need to plan the 4th of July meal, I have to start working on that, it's a must do, on my list. Our family tradition is to have friends and family over to the house. We have a firework show in the middle of the road and our neighbors also join us in this endeavor, we have a grand time. We also save our dead Christmas Tree and we light it to start off the firework show, the flames have been known to reach 20 to 30 feet high. This year we are playing a showing of the movie Avitar first! We will have lots of food, drinks, family and friends!

Homemade Guacamole for Saturday Lunch June 26, 2010
Today's Lunch; Homemade Guacamole and Tortilla Chips! With a glass of Sprite Zero and Orange Juice! Yummy! How I made the Guacamole for one; 1 1/2 Haas Avocado, 1/2 homegrown tomato, 1 garlic clove minced, sea salt, cracked pepper, 1 tsp. cilantro and the juice from half a lime. I put this in a small bowl and took a fork and a knife and sliced and smashed the ingredients together. I then put in a ramekin dish and served with tortilla chips!

First Day I Started My Blog
I Started my blog today, June 24, 2010. I got the idea from my friends on facebook. I started posting my pictures of all my food I make and eat. I did this first to see what I was eating everyday to help me make better decisions with my food choices. I have to tell you right off the bat, I am terrible with my grammar and spelling even though they have spell check on here, I will use the wrong words sometimes when I'm writing, so be patient with me. I've always struggled, when I was in school and I was a C average student. I do care and I really try to get it right but I always fall short. My internet service has been on the fritz for the past two day's, it really frustrated me today, because I wanted to get so much work done on my blog, but it will have to wait for another day! I think the Lord is trying to teach me patience and the funny thing is, I thought I had it already!
Thursday June 24, 2010 Garlic Rosemary and Lime Roasted Pork
Dinner tonight;
Roasted Garlic Rosemary and Lime Roasted Pork, Jasmine Rice cooked in chicken broth and Broccoli roasted with fresh ginger and garlic.
This was a very tasty meal, I have made this meal many times! I cooked the pork for 4 hours at 350 degrees. I cut slits in the pork and put slivers of garlic in the slits. I made a paste of onion, 5 cloves of garlic, parsley, rosemary, thyme, lime, lemon, salt, pepper, white wine, vinegar and olive oil. I rubbed it all over the pork. I put the Boston Butt on a double foiled lined cookie sheet and I then covered it with foil very tightly. How I made the Broccoli I washed and chopped the broccoli, put on a foil wrapped cookie sheet. I minced 1 garlic clove and about 1 tsp. of fresh ginger about one to two tablespoons of Extra Virgin Olive Oil, a few shakes of sea salt and lots of cracked pepper mix all together coat the broccoli, then lay it flat on cookie sheet bake at 400 degrees on middle rack in oven for about 15 minutes until tender. How I made the rice; 1 cup Jasmin Rice, 1 and 3/4 cup of chicken broth. Bring the broth to a boil add rice, 1/2 tsp Sea Salt and 1 tablespoon of Extra Virgin Olive Oil. Cook 1 minute, cover reduce heat to low, cook for 15 to 20 minutes until tender.
Healthy Breakfast Yogurt and Fresh Fruit Thursday June 24, 2010
Today's Breakfast; Greek yogurt, fresh blueberries, fresh pineapple and homemade granola! Yummy! The granola is oats, honey, almonds, walnuts, cinnamon, brown sugar, butter and vanilla!
